Chocolate-dipped Orange Shortbread



2 1/4 cups flour
pinch of salt
1 tsp baking powder
2 sticks butter, softened
1 cup granulated sugar
1 egg
1 1/2 tbsp grated orange rind
4 - 6 oz. semi-sweet chocolate

Preheat oven to 350 F.
Line two baking sheets with parchment paper
Combine flour, salt, and baking powder in a bowl
Beat the butter and sugar in a large bowl until light and fluffy
Beat in the egg and orange rind
Fold in the flour until just combined
Spoon mixture into a pastry bag or a ziplock bag with the corner cut out
Pipe 1 1/2 to 2 inch long cookies that are about 1/2 inch wide (hole diameter) onto baking sheers ... 2 inches apart
Bake 10 - 12 minutes until just golden around the edges
Transfer on wire rack to cool completely
Melt chocolate in small bowl
Dip top of each cookies into the melted chocolate
Place cookies on wire rack to set.
Store in airtight container
